Swiss Chard Pesto!

I think I may have discovered something infinitely more tasty, and more accessible to regular basil pesto: Swiss Chard Pesto!

No, it’s not authentic, but it’s a lot more doable when you regularly have things like: garlic, whole almonds, parmesan cheese and wonderful greens of all sorts regularly on hand at home. Besides, doesn’t everyone secretly want an excuse to slather on an obscenely thick layer of pesto to eat on bread and call it healthy? Well now you can ^_^

 

Swiss Chard Pesto

1 bunch swiss chard, cut into 2″ pieces
2 cloves garlic
olive oil
parmesan cheese
handful whole almonds
lemon juice
salt & pepper

Bring to the boil a large pot of boiling water.
Add the swiss chard and cook until stems are perfectly tender.
Remove cooked chard from pot and plunge into cold water to stop the cooking and cool down the veggies.
In a small food processor, add all the remaining ingredients along with the cooked chard and blitz until you get a texture you like.
Taste for seasoning and add any extra salt, pepper and lemon juice as required.
Serve spread thickly on french bread
