My favourite, leftover, swiss chard pesto

This is the recipe for pesto made with leftover swiss chard, as opposed to fresh, and is my most regularly made spread that goes wonderfully with a slice of crusty bread.

I seem to always make this the day after we’ve eaten swiss chard for dinner, the night before, and it certainly makes it disappear faster than if I were to just leave it hanging around in the fridge as is!

My Favourite Swiss Chard Pesto
Leftover swiss chard, cooked however
Handful Almonds
2 cloves garlic
Lemon juice, to taste
1 chunk parmesan cheese
Olive oil
Salt & pepper, to taste

Place all ingredients into a small food processor and blitz until you get the texture you like.
Season with salt & pepper, to taste, and blitz again to encorporate.
Add a bit of lemon juice and extra olive oil to get the right consitency.
Serve generously on tasty bread or use like normal pesto.
